The vineyards, nestled in a privileged enclave on the outskirts of Novelda, benefit from a Mediterranean climate with continental influences and regular winds, ensuring a slow ripening of the grapes and protection against fungal diseases.
Casa Cesilia Crianza is a blend of 70% Monastrell and 30% Petit Verdot, varieties that thrive in the winery’s vineyards, benefiting from the unique climatic conditions of Alicante. The wine showcases the estate’s dedication to expressing the characteristic features and authenticity of its terroir-driven wines.
The production process of Casa Cesilia Crianza begins with a meticulous hand harvest, with yields less than 2 kg of grapes per vine to respect the fruit’s integrity. Following a pre-fermentation maceration facilitated by rapid cooling, the wine undergoes fermentation at controlled temperatures in stainless steel tanks. This slow maceration aims to gently extract tannins and anthocyanins, followed by malolactic fermentation. The aging process spans 12 months in a mix of French (70%), Eastern European (20%), and American (10%) oak barrels of 225 and 500 liters, contributing to the wine’s complexity and elegance.
This Crianza presents a high-layer cherry red color with a luminous ruby rim, offering an intense nose where balsamic notes, ripe red fruits, and hints of cedar wood stand out. Its palate is characterized by a good tannic structure, delicacy, and a sweet sensation without any aggressiveness, leading to a finish reminiscent of Mediterranean spices. With an aging potential of 6 to 8 years, Casa Cesilia Crianza is best enjoyed between 15 and 17ºC and pairs wonderfully with Mediterranean dishes, meats, sausages, duck breast, and cheeses.

It has an area of 14,256 ha and has 50 registered wineries . It obtained the designation of origin qualification in 1932.
