The harvest has been carried out at its optimum ripening point to achieve aromatic complexity. A manual harvest has been carried out first thing in the morning and in perforated 15 kg boxes, in order to respect the fruit as much as possible.
Development and aging
The bunches are transported directly to the pneumatic press where the flower must is gently extracted, which is then cleaned by a slight static racking. After this clarification process, the must undergoes alcoholic fermentation at a controlled temperature of 15-17ºC in stainless steel tanks. Then, this wine remains on its fine lees, performing periodic “batonnages” to achieve more volume and a silky effect on the palate.
Organoleptic characteristics
